Snack dinner can be as simple as a loaf of bread and a hunk of cheese. Ideally, there should be no cooking involved. But snackdinner's inaugural weekend called for slightly fancier fare.
Some of my favorite snack dinners evolve from whatever's leftover around the kitchen. This time, that was a bag of wilting shishito peppers, a wrinkled lemon, and a carton of mixed cherry tomatoes (here at snackdinner, we won't chide you for buying out-of-season). The tomatoes joined a little feta and oil for a simple salad. The shishitos worked well in an adaptation of this recipe from Bon Appetit. We wrapped things up with some naan from the freezer.
A word to the wise: Shishitos are generally mild; only 1 in 10 is spicy. But you might just get lucky (or unlucky, depending on your perspective), so be sure to test your peppers before sharing them with your littlest eaters. And keep some extra bread nearby (or a cocktail!) in case you need to cool down.
